The emigration of Italians to South America is a story we “Italian Americans” should know. Argentina has the largest population of Italians outside of Italy. Over 60% or Argentineans are of Italian descent. Also, Italians make up just under 50% of the population of Uruguay; more than half the population of MonteVideo is Italian. The foods enjoyed by S.A. Italians are much like Italian American food.The dishes are richer and more meat centered as they reflect the bounty of South America. Tonight we riff on a few of the more popular dishes inspired by Italian cooking but adapted to the South American market and kitchen.
